Adobo sauce
Adobo sauce is a dark, tangy red sauce made from dried chillies, vinegar, garlic, and spices, most familiar as the packing liquid for canned chipotle chillies. It adds smoky, spicy, and slightly sour depth to marinades, stews, and braises, particularly in Mexican and Filipino-influenced cooking. A small spoonful can flavour an entire dish without needing whole chillies.
