Adzuki beans (uncooked)
Adzuki beans are small, dark red legumes widely used in East Asian cooking, both in savoury dishes and, once sweetened, in desserts like red bean paste. They have a mildly sweet, nutty flavour and cook to a soft texture that holds its shape well. Dried beans are usually soaked before cooking, while canned versions are ready to use.
