Agar agar (powder)
Agar agar is a gelling agent derived from red algae, used as a plant-based alternative to gelatin. It sets firmly at room temperature once dissolved in hot liquid and cooled, and is common in jellies, puddings, and Asian confections. Unlike gelatin, it requires boiling to activate and sets more rigidly.
As a fine powder, this ingredient packs densely into a cup with very little trapped air.
