Amaranth grain (uncooked)
Amaranth grain refers to the whole, uncooked seeds of the amaranth plant, tiny and pale in colour, cooked similarly to other small grains. When simmered in liquid it becomes soft and slightly gelatinous, making it useful for porridges and as a binder. It can also be dry-toasted until it pops, similar to popcorn but on a much smaller scale.
