Amaretti (crushed)
Amaretti are small Italian biscuits made primarily from almonds, sugar, and egg white, with a characteristic bittersweet almond flavour from bitter almonds or apricot kernels. They range from crisp and crumbly to soft and chewy depending on the recipe, and are eaten on their own, crushed into desserts, or used as a base in tiramisu-style layered dishes. Crushed amaretti are also used as a crunchy topping or filling in baked fruit dishes.
Crushing breaks an ingredient into irregular fragments, which can pack either more loosely or more densely than the whole form depending on fragment size.
