Ancho chilli (dried)

Ancho chilli is the dried form of the poblano pepper, with a wrinkled, deep reddish-brown skin and a mild to moderate heat level. It has a rich, slightly sweet, raisin-like flavour and is a key ingredient in many Mexican sauces, moles, and marinades. It is typically rehydrated in warm water before being blended into a paste.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
