Apricots are small, orange stone fruits with a velvety skin and a flavour that is sweet with a slight tartness. They are eaten fresh, stewed, baked into pastries, or preserved as jam, and their flesh softens considerably when cooked. Fresh apricots have a short season and a much juicier texture than their dried counterpart.
