Asafoetida (ground)
Asafoetida is a pungent spice made from the dried resin of a giant fennel plant native to Central Asia, sold as a powder or resin lump. It has a strong, sulphurous raw odour that mellows into a savoury, onion-and-garlic-like flavour when cooked briefly in hot oil. It is used in very small amounts in Indian cooking, particularly in lentil and vegetable dishes.
Grinding reduces an ingredient to a fine, even texture that generally packs more densely than a whole or crushed form.
