Asam jawa
Asam jawa is the Malay and Indonesian term for tamarind pulp, the sticky, sour fruit pulp extracted from tamarind pods. It is soaked in water and strained to produce a tangy liquid used to sour soups, curries, and sauces throughout Southeast Asian cooking. It is typically sold as a compressed block of pulp with seeds and fibres still present.
