Baking powder
Baking powder is a chemical leavening agent combining an acid and a base, usually baking soda and cream of tartar, along with a starch filler. It reacts with moisture and heat to release carbon dioxide bubbles, causing batters and doughs to rise without needing an additional acidic ingredient. Most commercial baking powder is double-acting, releasing gas both when mixed and again when heated.
