Baking soda

Baking soda, or sodium bicarbonate, is a pure alkaline compound used as a leavening agent in baking when combined with an acidic ingredient such as buttermilk, yoghurt, or vinegar. The reaction produces carbon dioxide bubbles that help batters and doughs rise. It is also used in small amounts to tenderise meat or neutralise acidity in cooking.
