Bamboo shoots (canned drained)
Bamboo shoots are the young, tender shoots of bamboo plants, harvested before they mature into hard, woody stalks. They have a mild, slightly sweet flavour and a crunchy texture, and are commonly used in Asian stir-fries, soups, and braises. Fresh shoots require boiling to remove bitterness, though most are sold pre-cooked in cans or vacuum packs.
Once drained of its canning liquid, this ingredient weighs less per cup than it does undrained, though usually more than the dried, unsoaked form.
