Banana flour
Banana flour is made from dried, ground green bananas, giving it a mild flavour and a pale, slightly grey colour. It is naturally gluten-free and used in baking as a wheat flour substitute, often blended with other flours for structure. Because green bananas are high in resistant starch, this flour behaves somewhat differently from grain-based flours when heated.
