Banana (mashed)
Bananas are an elongated tropical fruit with a soft, sweet flesh encased in a peelable skin that changes from green to yellow as it ripens. They are eaten raw, baked into breads and cakes, or cooked and caramelised, with riper bananas being sweeter and softer, making them ideal for baking. Very ripe, spotted bananas mash easily and are often used to add moisture and natural sweetness to batters.
Mashing breaks down structure and removes air pockets, making the mashed form denser than the whole or chopped form.
