Barberries (dried)

Barberries are small, tart red berries, often dried, used extensively in Persian cooking to add a sharp, tangy contrast to rice dishes and stews. They are similar in size to currants but have a distinctly sour flavour rather than sweetness. Dried barberries are typically soaked briefly or sautéed in butter before being added to a dish.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
