Barley malt syrup

Barley malt syrup is a thick, dark sweetener made by sprouting and mashing barley grains, then cooking the extracted liquid down into a syrup. It has a deep, malty flavour rather than pure sweetness, and is used in baking breads and bagels, as well as in some brewing and confectionery applications. Its flavour and colour are considerably stronger than more neutral syrups like corn syrup.
