Bay leaves (dried, crumbled)

Bay leaves are the dried or fresh leaves of the bay laurel tree, used whole to infuse a subtle, herbal, slightly bitter flavour into soups, stews, and braises. They are added early in cooking and simmered for an extended time, then removed before serving since the leaf itself remains tough and inedible. Dried bay leaves have a more concentrated flavour than fresh ones.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
