Bean sprouts are the young, germinated shoots of mung beans or soybeans, with a crisp texture and mild, slightly nutty flavour. They are eaten raw in salads and sandwiches or briefly cooked in stir-fries, soups, and noodle dishes, where they retain some crunch. They are highly perishable and best used soon after purchase.
