Beef tallow (melted)
Beef tallow is rendered fat from beef, traditionally used for frying, roasting, and pastry-making before vegetable oils became widespread. It has a high smoke point and imparts a rich, savoury flavour to fried foods like chips and roasted potatoes. At room temperature it is solid, similar in consistency to lard.
Melting collapses the air pockets present in the solid form, so melted measurements are consistently denser — and heavier per cup — than solid or softened measurements.
