Beetroot (raw, grated)
Beetroot is a deep red-purple root vegetable with an earthy, sweet flavour, eaten roasted, boiled, pickled, or raw and grated. Its natural pigment stains readily, which is why it is also used as a natural food colouring. Cooking mellows its earthiness and brings out more of its natural sweetness.
