Berbere
Berbere is an Ethiopian and Eritrean spice blend built around dried chillies, along with warming spices such as fenugreek, coriander, and ginger. It has a deep red colour and a flavour that is both spicy and complex, used as a base seasoning in stews like doro wat. Because blends vary by household, its heat and spice balance can differ noticeably between brands.
