Bitter melon (sliced)
Bitter melon is a warty-skinned green gourd with a distinctly bitter flavour, widely used in South and Southeast Asian and Chinese cooking. It is typically sliced and stir-fried, stuffed, or added to curries, often salted beforehand to draw out some of its bitterness. Its interior contains large seeds and a spongy pith that is usually removed before cooking.
