Black bean paste
Black bean paste is a thick, salty condiment made from fermented black soybeans, ground or left partially whole, used widely in Chinese cooking. It adds a deep, savoury, slightly funky flavour to stir-fries, braises, and noodle dishes. It is distinct from sweetened black bean paste used in desserts, which is made from adzuki-style beans rather than fermented soybeans.
