Black cardamom (pods)

Black cardamom is a large, dark pod distinct from green cardamom, with a smoky, earthy flavour from being dried over open fires. It is used in savoury dishes such as curries, stews, and spice blends across South Asian cooking, rather than in sweet applications. The pods are typically added whole and removed before serving, or the seeds are extracted and ground.
