Black vinegar
Black vinegar is a dark, malty Chinese vinegar made from fermented rice, wheat, sorghum, or millet, with a deep, slightly sweet and smoky flavour. It is used in dipping sauces, braises, and noodle dishes, particularly in Chinese cuisine, where it adds complexity beyond simple acidity. Its flavour is more complex and less sharp than that of plain white or rice vinegar.
