Bok choy (chopped)
Bok choy is a type of Chinese cabbage with crisp white stalks and tender dark green leaves, commonly used in stir-fries, soups, and braises. It cooks quickly, with the stalks needing slightly longer than the leaves to soften. Smaller varieties, sometimes called baby bok choy, are more tender and are often cooked whole or halved.
Chopping breaks an ingredient into pieces, which changes how much air gets trapped between them compared with the whole form.
