Bonito dashi (powder)
Bonito dashi is a Japanese soup stock made by steeping dried, smoked bonito flakes (katsuobushi) in hot water, often together with kombu seaweed. It has a delicate but distinctly savoury, smoky flavour and forms the base for miso soup, noodle broths, and many other Japanese dishes. It is typically strained before use, leaving a clear, light-coloured liquid.
As a fine powder, this ingredient packs densely into a cup with very little trapped air.
