Bonito flakes (loosely packed)

Bonito flakes, or katsuobushi, are thin, delicate shavings of dried, fermented, and smoked skipjack tuna, used extensively in Japanese cooking. They are steeped in hot water to make dashi stock or sprinkled raw over dishes like okonomiyaki, where the heat from the food causes the flakes to visibly curl and move. Their smoky, savoury flavour is a foundational element of Japanese umami.
