Borlotti beans (uncooked)
Borlotti beans, also known as cranberry beans, are speckled pink and cream legumes with a creamy texture and nutty, slightly sweet flavour once cooked. They are widely used in Italian cooking, particularly in soups, stews, and salads. Fresh borlotti beans lose their distinctive speckled colour and turn a solid brownish-pink when cooked.
Measured before cooking, while the ingredient hasn't yet absorbed water or changed texture.
