Brandy
Brandy is a spirit distilled from fermented fruit juice, most commonly grapes, and aged in wood to develop a warm, fruity, slightly oaky flavour. It is used in desserts, sauces, and flambéed dishes, as well as in marinades for meats and fruit-based preserves. Its alcohol content is typically cooked off during flambéing or reduction, leaving behind its concentrated flavour.
