Brown sugar (firmly packed)
Brown sugar is granulated sugar combined with molasses, giving it a moist texture, a caramel-like flavour, and a light to dark brown colour depending on the molasses content. It is used widely in baking for its flavour and moisture-retaining properties, often measured by firmly packing it into a measuring cup. Light and dark brown sugar differ mainly in the amount of molasses they contain.
Firmly packed means the ingredient is pressed down into the cup, removing air pockets, so it weighs noticeably more than the same ingredient loosely packed.
