Brussels sprouts (halved)
Brussels sprouts are small, round vegetables that grow in clusters along a tall stalk, part of the same family as cabbage. They are roasted, steamed, sautéed, or shredded raw into salads, with roasting often used to bring out a nutty sweetness and caramelised edges. Overcooking can bring out a stronger sulphurous flavour and a mushy texture.
Halving changes how pieces settle into a cup compared with the whole ingredient, typically leaving more trapped air.
