Buckwheat (raw, groats)
Buckwheat is a seed from a flowering plant, not a true cereal grain, with a distinctive earthy, slightly bitter flavour. It is cooked whole as a grain substitute, ground into flour for pancakes and noodles like soba, or toasted into kasha. It is naturally gluten-free despite its name.
