Buffalo mozzarella (torn)

Buffalo mozzarella is a fresh Italian cheese traditionally made from the milk of water buffalo, with a soft, elastic texture and a mild, milky flavour. It is typically eaten fresh in salads such as caprese, or on pizzas, where its high moisture content makes it especially creamy. It is usually stored and sold in its own whey or brine to keep it moist.

Tearing creates irregular pieces with more trapped air than a finely chopped form of the same ingredient.
