Cabbage (shredded)
Cabbage is a leafy vegetable that grows in dense, round heads, available in green, red, and Savoy varieties, with a mild, slightly peppery flavour raw and a sweeter taste when cooked. It is eaten raw in slaws, fermented into sauerkraut and kimchi, or cooked in soups, stir-fries, and braises. Its dense structure means it holds up well to long cooking times without disintegrating.
Shredding produces long, thin strips that trap more air than a fine grate, so shredded measurements are typically lighter per cup.
