Cacao powder (raw)

Cacao powder is made by grinding cacao beans that have been fermented and dried but processed at lower temperatures than cocoa powder, intended to preserve more of the bean's natural compounds. It has a slightly more bitter, complex flavour than standard cocoa powder and is used similarly in baking, drinks, and desserts. The two are largely interchangeable in most recipes.
