Candied peel
Candied peel is the rind of citrus fruits, such as orange or lemon, that has been cooked in a sugar syrup until translucent and sweet, then often dried or left slightly sticky. It is chopped and used in fruit cakes, puddings, and pastries for a chewy, sweet-tart addition. Its firm, chewy texture is distinct from fresh citrus zest.
