Cassava flour

Cassava flour is made from the whole cassava root, peeled, dried, and ground into a fine, gluten-free flour. It is used as a wheat flour substitute in baking, valued for producing a texture closer to wheat-based baked goods than many other gluten-free flours. It differs from tapioca flour, which is made only from the starch extracted from the same root.
