Castor sugar
Castor sugar is an alternate spelling of caster sugar, a very finely granulated white sugar that dissolves quickly and is favoured in baking, particularly meringues and sponges. It is finer than standard granulated sugar but coarser than icing sugar. Its quick-dissolving nature makes it useful anywhere a smooth batter or dissolved syrup is needed.
