Cauliflower (finely chopped)
Cauliflower is a cruciferous vegetable with a dense head of white (or occasionally purple, orange, or green) florets, related to broccoli and cabbage. It is roasted, steamed, mashed, or riced into a low-carbohydrate substitute for grains, with a mild flavour that takes on a nutty sweetness when roasted. Its dense texture allows it to be riced or mashed to mimic starchier vegetables and grains.
Finely chopped pieces are small and pack more densely into a cup than roughly chopped pieces of the same ingredient.
