Cauliflower (riced)
Cauliflower is a cruciferous vegetable with a dense head of white (or occasionally purple, orange, or green) florets, related to broccoli and cabbage. It is roasted, steamed, mashed, or riced into a low-carbohydrate substitute for grains, with a mild flavour that takes on a nutty sweetness when roasted. Its dense texture allows it to be riced or mashed to mimic starchier vegetables and grains.
Ricing forces an ingredient through small holes to create fine, rice-sized granules, which pack differently than a mashed or whole form.
