Chilli bean paste
Chilli bean paste, also known as doubanjiang, is a spicy, salty fermented Chinese condiment made from broad beans, soybeans, and chillies. It forms the flavour base for many Sichuan dishes, including mapo tofu, adding heat and a deep fermented savouriness. It is typically cooked briefly in oil to release its flavour before other ingredients are added.
