Chilli oil
Chilli oil is oil infused with dried or fresh chillies, sometimes along with other aromatics like garlic and Sichuan peppercorns, ranging from clear and simply spicy to thick with crispy chilli solids. It is used as a condiment drizzled over noodles, dumplings, and other dishes for heat and flavour. Some varieties are quite mild and aromatic, while others are intensely hot.
