Chinese broccoli (chopped)

Chinese broccoli, also known as gai lan, has thick, tender stalks and dark green leaves with small white flowers, and a slightly bitter flavour similar to broccoli. It is commonly stir-fried or blanched and served with oyster sauce in Chinese cooking. The stalks are often lightly peeled to remove any tough fibres before cooking.

Chopping breaks an ingredient into pieces, which changes how much air gets trapped between them compared with the whole form.
