Chinese cabbage (shredded)

Chinese cabbage, also known as napa cabbage, has a barrel-shaped head of pale green, crinkled leaves and a milder, sweeter flavour than Western round cabbage. It is used in stir-fries, soups, and dumplings, and is the traditional base vegetable for making kimchi. Its leaves are more tender and cook faster than those of round cabbage.

Shredding produces long, thin strips that trap more air than a fine grate, so shredded measurements are typically lighter per cup.
