Chipotle (dried)
Chipotle refers to a jalapeño pepper that has been smoked and dried, giving it a deep, smoky, moderately spicy flavour distinct from the fresh pepper. It is used ground as a powder, whole and rehydrated, or most commonly canned in adobo sauce, adding smokiness to Mexican and Tex-Mex dishes. Its smoky character sets it apart from most other dried chillies.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
