Chorizo (diced)
Chorizo is a seasoned pork sausage, with Spanish varieties typically cured and flavoured with smoked paprika, and Mexican varieties usually fresh and cooked before eating. It is sliced and eaten on its own, fried until crisp, or crumbled into stews, rice dishes, and tacos, releasing a distinctive spiced, often orange-tinted oil as it cooks. The two regional styles differ significantly in texture and preparation.
