Citric acid
Citric acid is a naturally occurring acid found in citrus fruits, sold in crystalline powder form and used to add tartness or adjust acidity in cooking and preserving. It is used in canning, candy-making, and as a substitute for lemon juice when a purely sour flavour without added liquid is needed. A small amount provides significant sourness due to its concentrated form.
