Cloves (ground)
Cloves are the dried, unopened flower buds of a tropical evergreen tree, with an intensely pungent, sweet, slightly numbing flavour. They are used whole, studded into hams and onions or added to mulled drinks, or ground into spice blends and baked goods. Their strong flavour means they are used sparingly, as too much can quickly overpower a dish.
Grinding reduces an ingredient to a fine, even texture that generally packs more densely than a whole or crushed form.
