Cocoa powder
Cocoa powder is made by pressing most of the cocoa butter out of roasted cacao beans and grinding the remaining solids into a fine powder. It is used in baking, drinks, and confectionery for its concentrated chocolate flavour without added fat or sugar. Natural and Dutch-processed cocoa powder differ in acidity, which affects how they react with baking soda or baking powder in a recipe.
